Elaboración de un análogo a chanquete

en sus propiedades sensoriales de textura, forma, color
y sabor. Su elaboración se realizará a partir de diversas
fuentes de origen pesquero, es decir músculo de pescado,
u otras especies acuículas, sometido o no a procesos
de picado y/o lavado. La fabricación puede realizarse
por varias vías que comprenden picado y/o homogeneización
y reestructuración mediante extrusión o moldeo.
A esta masa se le adicionarán diversos componentes dependiendo
de su función: estabilizante, ligante, texturizante,
etc. y son sales, hidrocoloides, proteínas, aminoácidos
y azucares. El que intervengan todos o solo algunos de
estos ingredientes varía en función de las condiciones y
características del producto de partida, así como del tratamiento
físico al que se vea sometido. Además el producto
se contemplará preparado de varias maneras: fresco,
congelado, pasteurizado esterilizado, pudiendo estar

Enseñanza-aprendizaje del Derecho Mercantil en el segundo año de implantación en el Grado en Derecho
La adaptación al Espacio Europeo de Educación Superior ha supuesto un cambio fundamental el modelo de enseñanza-aprendizaje, con importantes consecuencias en la forma de impartir la docencia. De este modo, parece oportuno, una vez iniciado el proceso de adaptación, realizar un análisis del sistema de docencia seguido en la impartición de la Asignatura Derecho Mercantil en el segundo año de su impartición en el grado en Derecho. Se pretende en esta comunicación poner de relieve las dificultades encontradas, así como las consecuencias que la evolución de la sociedad actual impone en el diseño de los métodos docentes para lograr una mejora en el proceso de enseñanza-aprendizaje. En particular resulta relevante analizar las necesidades de la asignatura, tanto desde un punto de vista objetivo como en relación con el alumnado concreto, con el objeto de lograr que se cumpla la finalidad del nuevo sistema implantado, lo que obligará a analizar en especial el seguimiento del cronograma y la aceptación del mismo por los alumnos
The relevance of unfair competition in the touristic sector
El Derecho de la competencia que regula la actividad de los operadores en el mercado tiene una importancia significativa en la medida en que permite regular la forma de actuación de los distintos competidores. Este derecho cobra una especial importancia en el sector turístico y, muy particularmente, en la actividad que desarrollan los distintos operadores turísticos en el mercado. En este sentido se muestra oportuno poner de manifiesto las principales conductas realizadas por los empresarios turísticos que pueden quedar afectadas por el Derecho de la competencia. Se muestra como especialmente importante en este ámbito la irrupción de nuevos sistemas de alojamiento y transporte que han resultado afectados en la actualidad por lo que se denomina “economía compartida”. Esta circunstancia ha ocasionado que desde numerosos sectores se haya considerado que nos encontramos ante prácticas que deben ser calificadas como competencia desleal. El objetivo de este trabajo es analizar por una parte la importancia del Derecho de la competencia en el sector turístico, así como posteriormente llevar a cabo una reflexión sobre la compatibilidad de los nuevos sistemas de economía compartida con el Derecho de la competencia.The competition law regulating the activities of operators in the market has significant importance considering that this field of law establishes a regulation of competition between competitors in the market. This regulation is particularly important in the tourism sector and, particularly, in the activities performed by the various tour operators in the market. In this sense this paper will analyse the main behaviours of tourism businesses that may be affected by competition law. The emergence of new accommodation and transport systems that are affected today by what is called "shared economy" has particularly importance in this area. This has caused that for many sectors has been considered that we are dealing practices that should be classified as unfair competition. Role of sulfites and 4-hexylresorcinol in microbial growth and melanosis prevention of deepwater pink shrimp (Parapenaeus longirostris) using a controlled atmosphere
A controlled atmosphere containing 48% CO2 and 7% O2 was used in association with refrigeration for storage of deepwater pink shrimp (Parapenaeus longirostris). Shrimp were treated with two different concentrations of sodium metabisulfite or 4-hexylresorcinol and subjected to the controlled atmosphere immediately after capture onboard ship or on arrival in port. Total volatile basic nitrogen, total viable counts, enterobacteria, lactic acid bacteria, and luminescent bacteria were determined, and black spot progression was evaluated. The combined effect of controlled atmosphere and melanosis inhibitors was used to delay black spot development as compared to the shrimp stored in ice alone. Storage under the controlled atmosphere without ice limited microbiological quality, namely, total viable counts, but enterobacterial growth was lower.Peer Reviewe
El problema termoelástico de conducción de calor entre sólidos en contacto mediante ecuaciones integrales de contorno
Se presenta una formulación basada en integrales de contorno para el análisis de problemas de contacto sin fricción en termoelasticidad bidimensional. Como modelo de resistencia térmica en la zona de contacto se consideran funciones decrecientes con la presión de contacto. Las
ecuaciones del problema de conducción estacionaria de calor y las ecuaciones elásticas, que están acopladas a través de la resistencia térmica, se resuelven independientemente dentro de un proceso iterativo. La convergencia se alcanza cuando se obtiene una solución del problema
elástico con deformaciones térmicas sin tracciones en la zona de contacto y con una ley de compresiones que implique valores de la resistencia concordantes con los supuestos en las ecuaciones térmicas, las cuales se resuelven en primer lugar. La formulación numérica propuesta permite detectar la posible separación de los cuerpos cuando el flujo de calor circula hacia el sólido de mayor distorsionabilidad termoelástica. El artículo incluye dos ejemplos que ilustran la aplicabilidad del procedimiento expuesto.A boundary integral formulation for two dimensional thermoelastic contact problems
without friction is presented. The local thermal resistance at the contact zone is modelied as a given decreasing function of the contact pressure. The stationary heat conduction equations and the elastic equations, which are coupled through the thermal resistance, are solved independently in the scope of an iterative process. The elastic problem involving thermal loading is solved, and convergence is reached when the obtained contact pressure leads to a thermal resistance in agreement with the one assumed in the thermal problem, which was formerly solved. The present formulation also accounts for the possibility of separation in the initial contact zone when the heat flows towards the body of greatest distorsivity. The paper includes two examples illustrating the reliability of the method.Peer Reviewe
Zircon Dates Long-Lived Plume Dynamics in Oceanic Islands
In this contribution we report the first systematic study of zircon U-Pb geochronology and
δ 18O-εHf(t) isotope geochemistry from 10 islands of the hot-spot related Galapagos Archipelago. The data
extracted from the zircons allow them to be grouped into three types: (a) young zircons (0–∼4 Ma) with εHf(t)
(∼5–13) and δ 18O (∼4–7) isotopic mantle signature with crystallization ages dating the islands, (b) zircons
with εHf(t) (∼5–13) and δ 18O (∼5–7) isotopic mantle signature (∼4–164 Ma) which are interpreted to date
the time of plume activity below the islands (∼164 Ma is the minimum time of impingement of the plume
below the lithosphere), and (c) very old zircons (∼213–3,000 Ma) with mostly continental (but also juvenile)
εHf(t) (∼−28–8) and δ 18O (∼5–11) isotopic values documenting potential contamination from a number of
sources. The first two types with similar isotopic mantle signature define what we call the Galápagos Plume
Array (GPA). Given lithospheric plate motion, this result implies that GPA zircon predating the Galápagos
lithosphere (i.e., >14–164 Ma) formed and were stored at sublithospheric depths for extended periods of time.
In order to explain these observations, we performed 2D and 3D thermo-mechanical numerical experiments of
plume-lithosphere interaction which show that dynamic plume activity gives rise to complex asthenospheric
flow patterns and results in distinct long-lasting mantle domains beneath a moving lithosphere. This
demonstrates that it is physically plausible that old plume-derived zircons survive at asthenospheric depths

Melanosis inhibition and SO2 residual levels in shrimps (Parapenaeus longirostris) after different sulfite-based treatments
The effectiveness of different sulfite-based treatments to prevent melanosis in fresh deepwater pink shrimp (Parapenaeus longirostris) was evaluated. Increasing the concentration of sulfites, different methods of application (immersion and dust) and synergy with other compounds, such as citric acid and chelants, were investigated. The level of SO2 residues in the muscle was determined in a selection of the most effective treatments. One-hour dip treatment with 50 g kg-1 sulfite, together with citric acid and chelants, was effective for melanosis prevention for at least one week. With this treatment, the statutory limit of 0.3 g kg -1 SO2 in edible part was not exceeded by the majority of samples analysed. © 2005 Society of Chemical Industry.Peer Reviewe
Functional and bioactive properties of collagen and gelatin from alternative sources: A review
The rising interest in the valorisation of industrial by-products is one of the main reasons why exploring different species and optimizing the extracting conditions of collagen and gelatin has attracted the attention of researchers in the last decade. The most abundant sources of gelatin are pig skin, bovine hide and, pork and cattle bones, however, the industrial use of collagen or gelatin obtained from non-mammalian species is growing in importance. The classical food, photographic, cosmetic and pharmaceutical application of gelatin is based mainly on its gel-forming properties. Recently, and especially in the food industry, an increasing number of new applications have been found for gelatin in products such as emulsifiers, foaming agents, colloid stabilizers, biodegradable film-forming materials and micro-encapsulating agents, in line with the growing trend to replace synthetic agents with more natural ones. In the last decade, a large number of studies have dealt with the enzymatic hydrolysis of collagen or gelatin for the production of bioactive peptides. Besides exploring diverse types of bioactivities, of an antimicrobial, antioxidant or antihypertensive nature, studies have also focused on the effect of oral intake in both animal and human models, revealing the excellent absorption and metabolism of Hyp-containing peptides. The present work is a compilation of recent information on collagen and gelatin extraction from new sources, as well as new processing conditions and potential novel or improved applications, many of which are largely based on induced cross-linking, blending with other biopolymers or enzymatic hydrolysis. © 2011 Elsevier Ltd.Peer Reviewe
